Well last night no food was cooked but I have a very valid excuse…a nasty stomach bug that rendered me unable to do much of anything other than bow to the porcelain goddess. But tonight I got back on track with another Tyler Florence recipe, Chicken Enchiladas – http://www.foodnetwork.com/recipes/tyler-florence/chicken-enchiladas-recipe/index.html. The verdict from my husband was a thumbs up. I was more lukewarm on it. I still don’t think I really like the smokey taste of chipolte but Michael was happy and I love when he enjoys what I make.

April 14, 2010So last night there was no cooking since we were out celebrating my daughter’s 7th birthday but returned today with the best of intentions. I had been feeling queezy all day but still planned to cook chicken enchiladas for my hubby (another Tyler Florence recipe I want to try!). But then, I wasn’t feeling too good so I took a quick nap after work which zapped my remaining energy. So hubby had to fend for himself … well he said he would but then the drama started, “Oh my stomach hurts, I think its hunger pains” he proclaimed. So I gave in to the guilt and made him 2 egg white sandwiches not exactly a star effort but he got fed.
Tomorrow night I WILL cook the chicken enchilada recipe and thanks to a little birdie out there I got another great recipe for ravioli so we’ll try that later in the week!

So here is the update on last night. Started out a bit rough when my husband insisted that he wouldn’t eat the steak I had bought to make the fajitas. In the back of my mind I thought this may be the case since he is quite health conscious and had eaten meat the night before when we went out to dinner. So, I had the chicken as my backup anyway ….still started out annoyed. Then I whipped up a yummy marinade and while the chicken was marinating I made my him some fresh mango salsa which he gave a thumbs up (I was surprised since there was a mix of lime juice, mangoes, red onions, cilantro. A little later I made the chicken fajitas and he really enjoyed them So all in all the first night of the this experiment went A-OK! Tonight is my daughter’s b-day so we are going out to eat. Next update will be on Tuesday night.
Extra VIrgin
April 11, 2010Well today is the day that I kick this experiment off. I am a foodie and my husband is a picky eater. I like to cook however my choices are limited due to my husband’s picky palate. He says he be more open to try things since he is now tired of eating cereal nightly! I want to have fun cooking again and he is hungry! So here we go!
Tonight, I will attempt Tyler Florence’s (one of my fave celeb chefs) Fajita recipe. But first have to check with the picky one to see if he’ll eat steak fajitas or if I must make the chicken ones (my husband loves chicken it’s probably my least favorite).
